This ancient recipe has been recovered in 2001 by the Di Marco family, one of the oldest families of breadmakers in Rome, with the intention to valorise its tradition through a modern-day form, and to innovate the pizza restaurant sector.
The goal is to address the main weaknesses of today’s pizza, and to help simplifying and resolving all the professional obstacles typical of activity in this sector.
